一、中國的美食文化

    中國諺語:民以食為天。中國各種美味佳肴不僅遍布全國各地,更是享譽全世界。就美食而言,除了帶給人味覺享受外,更包含人文特色和文化內涵,如林語堂先生所說的:“‘在中國無所不在,無往不通。這種,表面上看是一種生理滿足,但實際上借吃這種形式表達了一種豐富的心理內涵。(?)吃的文化已經超越了本身,獲得了更為深刻的社會意義。從古至今,聰明睿智的中國人將飲食上升為一種思想和境界、甚至一種哲理而論修身、齊家、治國、平天下。中國美食的文化內涵,分為有形美食和無形美食兩個方面:

有形美食,是美食的物質文化,即美食的本身。無形美食,在中國文化中是美食的精神文化。一定程度上,中國美食的精神性,大大的超出了美食的本身,主要集中在情、禮等方面,是對中國飲食文化社會心理功能的概括,是指中國飲食文化的禮儀性。作為一部反映中國文化的紀錄片,舌尖上的中國 將中國飲食文化中的帶到觀眾面前,如在《主食的故事》一集中講到:在丁村人的壽宴上,全村人都要將自己碗里最長的一根面條放到壽星的碗里,要等壽星將那碗帶著全村人祝福的面條吃完,一場壽宴才算是圓滿。

 

二、中國的民族文化

    中國人的民族文化歷史悠久,是中華民族幾千年文明的結晶。《舌尖上的

中國》通過美食挖掘了中國人的民族文化,主要表現在以下幾個方面:

 

1、再現中國人的節日文化與民俗文化

    節日文化是一種歷史文化,有的是為了紀念某一個重要的歷史人物,如端午節,或紀念某一重要歷史事件,或是慶祝某一時節的到來等。3舌尖上的中國 除了向觀眾呈現了中華民族傳統的春節、端午節和重陽節等中國人熟知的節日外,還記錄了古爾邦節、冬節、新米節、望果節等具有地方特色和民族特色的古老的節日,以及祭湖祭魚和請酒神等古老民俗。其中,對于春節,本片就通過記錄不同地域的三個家庭的不同的飲食來體現中國節日文化的博大。如片中東北的‘石把頭’家的年夜飯與往年一樣,是一桌全魚宴;寧波‘寧寧’家過年的餐桌上少不了年糕;攝影師‘白波’一家人餃子才是過年時餐桌上必不可少的食物。因此 舌尖上的中國 不僅展示了現代中國文化,更以歷史性思維和視角呈現故事。這反映了其對于西方紀錄片成功的學習。如Geiger.J.2011)所說,以歷史的視角講述是BBC紀錄片擅長的手法。(Geiger.J.2011這也是 舌尖上的中國 成功因素之一。

 

2、再現中國人的家族文化與家庭文化

     如第一章節所述,BBC人文紀錄片的核心追求之一是‘人類通感’,相似的,對于人類通感的追求也在 舌尖上的中國 集中體現在中國人的家庭文化觀念上。從古至今,家族和家庭的觀念在中國人的心中有著十分重要的地位,中國受數千年的農耕文明和儒家文化的影響,造就了根深蒂固的家庭觀念。然而隨著上世紀70s以后改革開放的加深和中國經濟文化發展的不平衡,越來越多的中國人離開家鄉去大城市謀生,‘家’成為了外出謀生者心中最思念的地方。舌尖上的中國 抓住中國人對家的感情,通過反映傳統的家族和家庭觀念,獲取中國觀眾在文化上的認同。例如,在第二集《主食的故事》中:

白波至今記得,小時候奶奶總會在餃子里包上各種各樣的東西。看著餃子在

鍋里煮得咕嘟咕嘟的,白波就由衷地歡喜。中國人傳統的家庭觀念延續不

斷。·····無論她們走到哪兒,無論飛得多遠,她們都會想起爸爸媽媽,都會想

起家里熱氣騰騰的餃子。在白波心中,最好吃的還是媽媽做的燜面,無論什么時

候再吃都會覺得好吃,只是因為那是媽媽做的。

在這一集的最后:

中國人的傳統家庭觀念代代相承,他們傳承給下一輩的東西,下一輩也會繼

續傳承下去·····其實在這樣一個晚上吃的是什么并不重要,沒有什么比跟家人

在一起更重要了,這是他們全部的希望······中國人,這個全世界最重視家庭

觀念的群體,依然在各自的屋檐下,一年又一年地重復著同樣的故事。

 

3、再現中國文化:‘勤勞節儉、誠信樸實’

     舌尖上的中國 通過典型示范的方式呈現和傳播中華民族的傳統:勤勞,節儉,誠信,樸實。片子通過對飲食文化的介紹,用聲畫的方式呈現普通中國人的生活態度和方式,讓觀眾能夠從普通人的生活態度和方式中發現中國的傳統美德。根據Shan.W(2005).:講普通人的故事,源自中國自上世紀80年代末興起的‘neo-realism’,同樣來自于西方,中國學術界稱之為‘xinxieshi zhuyi其目的大部分也在于追求人類通感。(Shan, Wanli .2005:27) 舌尖上的中國 一集情節中,即使諾鄧是井鹽的產地,但是‘老黃’在做火腿時仍然對每一粒鹽都非常珍惜;對于做豆腐的‘姚貴文’和‘王翠華’,每一顆豆腐都很珍貴;在紹興的醬園里,一只醬缸修修補補要用幾十年;這些都是節儉的傳統文化在中國普通人生活中的具體體現。另外,廣西的‘阿亮’為了保證酸筍的品質推掉了客人的訂單;‘姚貴文’的豆腐攤今天仍然沿用著古老的計數方式;這是誠信樸實的中國普通人的真實寫照。在片中,觀眾看到的最多的是對于普通人的勞動的贊美:安徽的‘葉圣武‘和‘葉茂榮’兄弟每年都要去湖北嘉魚進行一項艱苦的工作——挖藕;查干湖的漁民凌晨四點就要趁夜色出發去捕魚;綏德的‘老黃’每隔三天就要騎一個半小時的車去縣城賣黃饃饃;四川的‘素瓊’全家天還沒亮就開始一天的勞作----所有這些都是對辛勤勞作的普通人的寫實,也是此紀錄片對中國傳統文化價值觀成功的呈現。例如在第一集‘自然的饋贈’的結尾是這樣說的:

當我們遠離自然享受美食的時候,最應該感謝的是這些付出勞動和智慧的人

們,而大自然則以她的慷慨和守信,作為對人類的回報和獎賞。

  

    綜上,與以往中國美食紀錄片不同,舌尖上的中國 汲取西方紀錄片尤其是BBC紀錄片的文化表現手法,在故事情節中蘊含文化內涵,拒絕單純的展現中國傳統美食的魅力,它更像一部文化大片,獲得巨大成功。

 


   In large part, the reason why A Bite of China became such a huge success that it was loved and welcomed by the audience is due to its cultural connotations. This is a 'cultural documentary' that is different from the previous Chinese food documentaries.
Just as (?) said, each story of BBC’s documentaries on humanity contained a cultural connotation with historic and cultural beauty.(?) Similarly, A Bite of China, a break from the previous Chinese food documentaries, shows Chinese culture in addition to food. By collecting, sorting and analyzing the program content, A Bite of China shows Chinese culture mainly in the following aspects:

 

I. Chinese food culture

    As an old Chinese saying goes, 'food is what matters most to people'. A wide variety of Chinese delicacies not only spread all over the country, but also are renowned worldwide In addition to bringing taste enjoyment to people, food, for its part, contains humanistic features and cultural connotations, just as Lin Yutang said: 'eating' goes smoothly everywhere in China. Superficially, such 'eating' is a physiological satisfaction, but in fact, it is the expression of a rich psychological connotation in the form of eating.(?) Eating culture has gone beyond the 'eating' itself, to obtain a more profound social significance. Since ancient times, wise Chinese people have ripened food into a thought realm, or even a philosophy in terms of self, family, country and the world. The cultural connotations of Chinese food are divided into tangible food and intangible food:

Tangible food, material culture of food, is just food itself. Intangible food is the spiritual culture of food in Chinese culture. To some extent, the spirituality of Chinese food is much beyond the food itself, mainly in 'love, comity', etc., where 'love' is the generalization of  socio-psychological functioning of Chinese food culture, and 'comity' means the ceremonialism of Chinese food culture. As a documentary reflecting Chinese culture, A Bite of China brings the 'comity' in Chinese food culture to the audience; as mentioned in the episode of "Staple Story": At a birthday banquet, each of Ding villagers puts the longest noodle of his or her own bowl into the birthday persons bowl. And only when the birthday person finishes eating that bowl of noodles with the whole villagers blessing, can a birthday banquet be considered satisfactory.

 

II. China's national culture

    Chinese people's national culture, with a long history, is the crystallization of thousands of years of Chinese nation’s civilization. A Bite of China unearths Chinese people's national culture from food, mainly in the following aspects:

 

1. Reproducing Chinese people’s festival culture and folk culture

    Festival culture is a historical culture, for the sake of commemorating a important historical figure, such as the Dragon Boat Festival, or commemorating a significant historical event, or celebrating the arrival of a season, and the like.(3) In addition to providing the audience with traditional Chinese festivals, as being well-known to Chinese people, such as Spring Festival, Dragon Boat Festival, Chung Yeung Festival, etc, A Bite of China records the ancient festivals with local characteristics and national characteristics, such as Eid al-Adha, Winter Solstice, New Rice Festival, Ongkor Festival, etc, as well as ancient folk customs such as offering lake, offering fish, Please Bacchus, etc. Among them, for the Spring Festival, this documentary reflects the breadth of Chinese festival culture by recording the different foods of the three families from different regions. For example, for 'Shibatou' family from northeastern China, the New Year's Eve dinner is a whole fish feast, much the same as in previous years; for 'Ning Ning' family from Ningbo, the Chinese New Year's dinner table is never short on New Year cake; for Photographer 'Bai Bo' family, dumpling is an essential food at the dining table during the New Year's holidays. Therefore, A Bite of China not only shows modern Chinese culture, but also presents stories in historical thought and perspective. This reflects its learning from the success of Western documentaries. As Geiger.J.(2011) said, the narrative in historical perspective is the good practice of BBC documentaries.(Geiger.J.2011) This is also one of factors for success of A Bite of China.

 

2. Reproducing Chinese familial culture and family culture

     As described in Chapter 1, one of the key pursuits of BBC humanity documentaries is the 'human synaesthesia'. Similarly, the pursuit of human synesthesia is also embodied in Chinese people’s values of family culture in A Bite of China. Since ancient times, the values of familia and family has occupied a dominant position in the hearts of Chinese people. Influenced by thousands of years of agricultural civilization and Confucian culture, China has created a deep-rooted values of family. However, with the deepening of reform and opening up and the imbalance of China’s economic and cultural development after 1970s, more and more Chinese people have left home for big cities to earn a living. As a result, 'home' has become the most unforgettable place for those who go out for a living. A Bite of China catches hold of Chinese people's feelings on home, and reflects the traditional values of familia and family, in order to be culturally recognized by Chinese audiences. For example, as mentioned in the second episode of "Staple Story",

Bai Bo can still remember that, as a child, his grandmother always put all sorts of things in the dumplings. Whenever Bai Bo watches the dumplings bubbling in the pot, he is always filled with joy. Chinese traditional family values are constant and continuous. ····· No matter where they go, no matter how far away they travel away from home, they will always think of their parents, and recall the steaming dumplings at home. In Bai Bo’s mind, the most delicious food is always the stewed noodles cooked by his mother; he always enjoys such noodles at any time, only because it is the mother's.

This episode ends:

·····Chinese people's traditional family values have been have been passed down from one generation to another. The something passed by them to their next generation will also continue to be passed down by their next generation••••• As a matter of fact, it does not matter what to eat in such a night; nothing is more important than staying with family, for this is what they want ••••••

’Chinese people, a population that is most concerned about family values in the world, still repeats the same story under their roofs year after year. '

 

3. Reproducing Chinese culture: 'industriousness, frugality, integrity and simplicity'

    By way of typical demonstration, A Bite of China presents and disseminates Chinese tradition: industriousness, frugality, integrity and simplicity. Through the introduction of food culture, the documentary presents ordinary Chinese people's life attitude and style by way of sound and screen, so that the audience can find a traditional Chinese virtue from ordinary people's life attitude and style. According to Shan.W (2005), telling the story of ordinary people originates from the 'neo-realism' having been on the rise in China since the late 1980s, and also from the West. It is called 'xinxieshi zhuyi' by Chinese academics. And its aim most also lies in the pursuit of human synesthesia. (Shan, Wanli .2005:27) In a plot of A Bite of China: even if Nuodeng is the origin of well salt, 'Huang' still cherishes every grain of salt when making ham;  for 'Yao Guiwen' and 'Wang Cuihua', who are engaged in making tofu, every tofu is very precious; inside the sauce and pickle shop in Shaoxing, a jar has suffered repeated tinkering for decades; these are the embodiment of frugal traditional culture in the lives of ordinary people in China. In addition, in Guangxi, 'Liang' turned down the guests’ orders, in order to ensure the quality of pickled bamboo shoot; 'Yao Guiwen'’s tofu stall still follows ancient counting method today; this is a true portrayal of Chinese ordinary people who are honest and simple. In the documentary, what the audience sees most is the praise for the work of ordinary people: in Anhui, 'Ye Shengwu' and 'Ye Maorong' brothers go to Jiayu, Hubei Province, to do a piece of hard work, digging lotus, every year; Chagan Lake fishermen go out for fishing by night at four o'clock; in Suide, 'Huang' sells yellow bun in the county town after one and a half hour's bike riding every three days; in Sichuan, 'Suqiong' family starts a day’s work before dawn ---- All these are hard-working ordinary people’s reality as well as the successful presentation of Chinese traditional cultural values made by this documentary. For example, Episode 1 The Gift from Nature ends:

When we enjoy the food away from the Nature, what we should be most grateful to are those people who devoted labor and wisdom to the food, and the Nature returns and rewards human beings with her generosity and trustworthiness.

  

   In summary, unlike the conventional Chinese cuisine documentaries, A Bite of China learns from the cultural expression of Western documentaries, especially the BBC documentaries, implies cultural connotations in the plots, and refuses to simply show the charm of traditional Chinese cuisine, so it is more like a cultural blockbuster, with great success.
